SCOPE OF RESEARCH CONDUCTED
- Development of new technologies for processing fruit and vegetables while maintaining the highest possible biological activity of the products.
- Assessment of the quality, authenticity and composition of clear and cloudy fruit juices, purees and nectars.
- Sensory evaluation of fruits, vegetables and their products. Consumer preference studies.
- Production technology and composition testing of low-calorie snacks based on dried fruits and vegetables.
- Assessment of the nutritional, sensory and biological value of fresh and processed fruits and vegetables.
- Development and improvement of processing technologies for certain types of vegetables, including freezing mushrooms and vegetables, pickling cucumbers and cabbage, and drying vegetables.
- Using modern processing technologies to obtain innovative products from fruit and vegetables.
- Development of innovative products, processing technologies, verification of technological assumptions, technological supervision.
- Expertise for the National Union of Juice Producers and individual producers in assessing the authenticity of semi-finished and commercial products of the juice industry (in accordance with the AIJN Code of Practice).
