Food safety

According to the definition of the Food and Agriculture Organization of the United Nations (FAO), food safety is the assurance that food will not cause harm to the consumer when prepared and/or consumed as intended.

Among food contaminants, the Laboratory identifies:

  • heavy metals: arsenic, cadmium, lead, chromium, nickel, mercury and others
  • nitrates (V) and nitrates (III)
  • mycotoxins – coming soon!!!
